We’re excited to share a delicious winter treat from Somer Valley House’s talented Sous Chef, Laura.
She’s letting us in on one of her favourite recipes – her indulgent Chocolate Guinness Cake, served with salted caramel sauce and crème fraîche.
This rich, warming cake is perfect for the colder months and is a true showstopper. Ready to give it a try? Here’s the recipe!
Ingredients:
250ml Guinness
250g unsalted butter
75g cocoa powder
400g caster sugar
150g sour cream
2 eggs
1 tsp vanilla paste
275g plain flour
2 ½ tsp bicarbonate of soda
Method:
- Preheat oven to 160°C. Line a deep 20cm cake tin with baking parchment.
- Heat the Guinness in a pan until it simmers, then add butter and melt gently. Remove from heat.
- In a separate bowl, mix cocoa powder and caster sugar, ensuring no lumps.
- Lightly whisk eggs, vanilla paste, and sour cream in another bowl.
- Slowly whisk in the Guinness-butter mixture, making sure it’s fully incorporated.
- Add the flour and bicarbonate of soda, stirring until smooth and lump-free.
- Pour the batter into the cake tin and bake for 40-45 minutes at 160°C (don’t open the oven for the first 30 minutes).
